NO. We add a small amount before the grapes are crushed to limit wild yeast growth, and do not recommend adding any extra prior to fermentation.

Fermentation can last anywhere between 24 hours and 30 days depending on the type of yeast, temperature, variety and other factors like nutrient availability (yeast available nutrient). Typically, if after one month, fermentation is not complete, give us a call and we can try to determine the problem. Late harvest, high alcohol, or fermentation under extremely cold temperatures may take much longer.

Red wines are made that way by extracting the colors and tannin from the skins and seeds of the grape berry. When purchasing red grape juice, and not crushed whole fruit, we recommend adding skins back to the fermentation for greater color extraction. Otherwise, it will be a rosé wine.

We require you to reserve skins during ordering. Reserving skins does not guarantee availability of skins at the time of pickup. The amount of skins we can give to reconstitute your juice is much less than if purchasing whole fruit, and will result in a richer complexity, but not a completely full bodied red wine.

We offer whole crushed fruit by the pound (minimum 50 lbs) on the day of crush; typically Tuesday mornings during harvest. These will result in full bodied red wines similar to those made my commercial wineries. Crushed reds typically yield 1 gallon for every 12 pounds.

Crushed reds should be punched down daily to extract color and flavor. Once the skins stop rising to form a cap, they can be pressed off by hand or with a wine press.

Potassium Sorbate regulates the growth of yeast and prevents further fermentation, and MUST be added if the wine is sweetened prior to bottling. You also need to add Potassium Meta-Bisulfite as well to stop bacterial fermentation.

Not adding Sorbate after sweetening can result in dangerous situations of popped corks, or worst case, exploding bottles.

The cost of a wine club shipment will be determined by the retail value of the shipment less a 15% wine club discount, plus any applicable shipping charges.
