Pasteur Champagne was selected by the Pasteur Institute of Paris and is widely used in the United States. Pasteur Champagne is a particularly strong yeast strain with a very high alcohol tolerance (> 16% vol.) with low volatile acidity and acetaldehyde production and good resistance to low temperature fermentation (14°C)
This yeast strain confers body and roundness and promotes the development of fresh and clean aromas.
Excellent for the production of white thermo regulated and sparkling wines.
