Potassium metabisulfite is a common additive, in which it forms sulfur dioxide gas (SO2). This both inhibits the growth of most wild protecting both color and flavors of wine.

Potassium sorbate produces sorbic acid when added to wine. It serves two purposes. When fermentation has ceased and the wine is racked for the final time, potassium sorbate will inhibit the growth and multiplication of any surviving yeast.
Food Grade Tartaric Acid for use in raising acidity in prefermentation must and finished wine.
Tannin Powder. For use in wine. Add to wine according to specific wine recipe. 1/4 tsp/gallon for white/rose wine must and 1/2tsp/gallon for red wine must.
